Kim's Mediterranean Salad

Ingredients: All lettuces cleaned and chopped: · Baby Spinach · Baby Arugula · Butter Lettuce · Red Onion, sliced and halved · Sun dried tomatoes in oil · Cucumber, chopped · Kalamata Olives, drained and sliced · Feta Cheese · Dressing · Olive Oil · Canola Oil · Good Seasons Zesty Italian · Gourmet Blends · Balsamic Vinegar · Warm Water



Directions for Salad Assembly:

It is important to make the dressing first. This is so that the ingredients of the salad dressing mix, can absorb more together. The dressing is made by taking one packet of "Good Season's Italian" or "Zesty Italian" dressing mix. I typically use a cruet that I have purchased with one of their "kits". Another important detail to this is also that I substitute balsamic vinegar for the red wine vinegar indicated and I substitute one-half of the measurement for canola oil with olive oil, before finally adding the water.

Next, drain the oil from the sundried tomatoes.

Then you can take all ingredients and layer them together in a large salad bowl, adjusting the volume of each component to your liking. A larger group would do well with 100% of the aforementioned ingredients, leaving the olives, sundried tomatoes, and feta cheese to the last, before finally adding the dressing and tossing all ingredients together.

Plate with your favorite sliced baguette or other bread, and enjoy!
